Vegetable & Tuna Leftovers Quiche

Are you sick of having the same boring left overs? or wasting food? Well then this recipe is for you!! Turn your lousy leftovers into a delicious quiche!

 

SERVES: 6

PREP TIME: 15-20 mins | COOKING TIME: 1 hour

 

Ingredients

Pastry

  • 2 cups wholemeal plain flour

  • 1/2 cup wheat germ

  • 120g light margarine

  • 2 egg yolks

  • 2-3 tbsp water

  • olive oil spray


Filling

  • 4 eggs + 2 egg whites (left over from pastry)

  • 1 cup buttermilk

  • 2-3 cups of leftovers (I used canned carrot, peas, corn + large tuna can)

  • Pepper, to taste

  • Herbs, to taste

 

Methods

  1. Preheat oven to 180 degrees celsius and spray a 23cm tart tin with oil.

  2. MAKE PASTRY. Sift flour into a large bowl. Stir through wheat germ then add margarine. Use fingertips to rub in thoroughly. Add egg yolks and water and form a dough. Roll it on a lightly floured bench and line the tart tin. Prick the base all over with a fork. Blind bake for 15 minutes. Set aside to cool down. Turn the oven temperature down to 175oC.

  3. MAKE FILLING. Whisk the eggs, egg whites and buttermilk to make the egg custard. Layer the leftovers in the tart case. Add chopped herbs and pepper. Pour in the egg custard to entirely cover the leftovers.

  4. Bake for 45-60 minutes or until the egg custard is set.

 

Here are some leftover examples you could experiment with:

  • Minced meat, capsicum and onion

  • Chicken curry, carrots, celery and potato

  • Roast vegetables, eggplant and herb

  • Fish (tuna or salmon), leek and pumpkin

  • Tinned legumes (chickpeas, lentils, etc) with your choice of veggies and diced tomatoes

  • Roast potato, pumpkin and spinach

  • The possibilities are endless!!
