Curry inspired Sweet potato, carrot & chickpea soup

They say soup is good for the soul and I would 100% agree. Theres nothing that a soup can't fix when its a rainy or cold sort of day. It really does warm you up on the inside!

 

Ingredients

  • 2 tbsp olive oil

  • 1 brown onion, chopped

  • 2 garlic cloves

  • 1 tsp ground coriander

  • 2 tsp ground cumin

  • 1 tsp chilli powder or curry powder

  • 600g sweet potato, peeled, diced

  • 500g carrots, peeled, diced

  • 6 cups salt reduced chicken stock

  • 400g can chickpeas, drained, rinsed

  • 270ml can coconut cream

  • Sourdough bread (optional, to serve)







 

Methods

  1. Heal oil in a large saucepan over medium-high heat and add onion and garlic. Sauté for 2-3 minutes or until onion softens.

  2. Stir in coriander, cumin and chilli powder for 1 minute.

  3. Add in sweet potato and carrot. Cook for 5 minutes whilst staring often.

  4. Add stock and bring to the boil.

  5. Reduce to medium-low heat and simmer, stirring occasionally for 20 minutes.

  6. Add chickpeas and simmer for an additional 10 minutes until chickpeas have softened.

  7. Blend soup, until smooth (or desired texture) by placing small batches into a blender or using a stick blender in saucepan.

  8. Stir through coconut cream

  9. Serve and enjoy (use teaspoon and coconut cream to add the sexy swirl)

 

Serving options

There are so many ways you can have soup! Here are the different ways I can think of:

  • Serve with croutons (by toasting your own favourite bread and cutting into squares)

  • Serve with your favourite toast (sourdough, turkish bread, multigrain, etc) to dunk and go

  • Or go completely crazy and serve in a capsicum or coconut for something different. Check out this website I found for some creative ways to serve your soup!

 

Meal Prepping

Soups are also great for meal prepping and can help you save $$$ as they are quite cheap meals to make in bulk.


Make your favourite or small batches of different soups and freeze a serve into different containers. Then all you have to do is heat it in a microwave and BAMN!! you have a tasty meal ready in about 2-4 minutes!
