Veggie Burrito Bowl

For those that love a good burrito but want to try something different! THIS ONE IS FOR YOU...


This was ridiculously tasty, so easy to make and so adaptable to suit everyones taste buds. It's perfect for on-the-go lunches or an easy going dinner!

 

SERVES: 4

PREP TIME: 8 mins | COOKING TIME: 30 mins

 

Ingredients

  • 2 tbsp olive oil

  • 1 red capsicum, diced

  • 1 cucumber, diced

  • 1 carrot, grated

  • 1 can red kidney beans

  • 1 small can corn

  • 2 cups rocket/lettuce mix

  • 1/3 cup tri coloured quinoa

  • 1.5 cups of brown rice

  • Halloumi, grilled





 

Methods

  1. Heat oil in a large saucepan over medium-high heat and add halloumi. Grill as per packet instructions.

  2. Cook rice as per packet instructions.

  3. Cook Quinoa as per packet instructions.

  4. Dice and prepare all veggies while rice and quinoa is cooking.

  5. Saute red kidney beans and corn in small saucepan with tbsp olive oil for 5-8 minutes.

  6. Place all desired ingredients into a bowl and sprinkle quinoa on top

  7. Enjoy!!

 

This burrito bowl is so adaptable. You can always change it up depending on what you like. Why not try these ideas instead:

  • Add avocado or feta

  • Swap halloumi for tuna, grilled chicken, pork or other lean meats

  • Try different veggies like sweet potato, eggplant, peas

  • Swap red kidney beans for other legumes such as lentils, chickpeas

  • Try adding different herbs and spices to change up the flavour

  • Go crazy and add pineapple or beetroot

  • Wrap it into a real burrito instead!







The possibilities are endless!!
