Mexican inspired stuffed capsicum

Stuffed capsicums... not only are they one of the most instagram-able meals I have ever seen but they are so incredibly tasty!



Capsicums are jammed packed with vitamins and minerals. They are a good source of Vitamin A, folate, Vitamin C, Vitamin K, Manganese, potassium and many more!!

They are also a good source of fibre!! meaning they contribute to good health, they are cardio protective, help manage blood sugar levels and get your bowels healthy and moving!!

 

SERVES: 2

PREP TIME: 10-15 minutes | COOKING TIME: 30 minutes

 

Ingredients

2 capsicums (red or green)

200g minced beef

1 brown onion, diced

2 garlic cloves, diced

2 tsp chilli powder

1/2 tsp cumin

1 can diced tomatoes

1 cup brown rice, cooked

Grated cheese

Paprika, if desired

 

Methods

  1. Pre-heat oven to 200 degrees celsius. Wash the capsicums and cut off the top and remove the seeds from the inside. Set aside for later

  2. Cooked mince till cooked through then add onion and garlic and cook till softened or brown.

  3. Stir in child powder, cumin, diced tomatoes and let simmer for 2-3 minutes and cook rice as per instructions on the packet.

  4. Once ready take off heat and stir in cooked rice.

  5. Stuff desired amount of mixture into each capsicum. Top with grated cheese and paprika, if desired.

  6. Bake uncovered for 30-35 minutes or until capsicum is cooked and cheese has melted.

  7. Serve and enjoy!!

 

The best part about stuffed capsicums is that you can stuff them with just about anything!!
