Pumpkin & Chickpea Satay Curry

This recipe is for those that love a little bit of spice in their life!!

SERVES: 4
PREP TIME: 15 mins | COOKING TIME: 20-25 minutes
Ingredients

1 tbsp extra virigin olive oil
1 brown onion
2 garlic cloves
2 diced red chilli
1/3 cup peanut butter
2/3 cup coconut milk
1 tbsp light soy sauce
700g peeled pumpkin
1 cup water
1 cup green beans
400g can chickpeas
1 lime
Mushrooms (optional)
Fresh coriander
4 cups cooked brown rice
Method
Heat oil in a large frying pan. Add the onion and cook , stirring occasionally, for 5 minutes or until soft.
Add garlic and chilli and cook for another 30 seconds or until fragrant
Reduce to a low heat. Add peanut butter, coconut milk and soy sauce. Stir until all is combined.
Add pumpkin and 1 cup of water. Cover and bring to a simmer. Cook stirring occasionally until pumpkin is tender
Add the beans, chickpeas to the pan and cook for another 2 minutes.
Cook mushrooms on the side (optional)
Add in lime juice and coriander leaves.
Add brown rice (and quinoa, optional) and stir through
Serve and enjoy!
Alternatives you might like to try:
Sweet potato instead or pumpkin (or a combination of both)
Play around with the spice by adding turmeric, cumin, curry powder or additional chilli to extra spice!
Use any left over veggies
