Shakshuka (Tomato bean braise)

This is one of my all time favourite meals to cook. It is super easy, extremely tasty and full of nutritious goodness. It's perfect to kick off your day as a hearty breakfast or even a simple dinner for those busy afternoons.

Legumes (or beans) are one of my favourite ingredients in any meal. They are so versatile, tasty and nutritious. Not only are they a vegetable but they are also a great source of protein, especially for my vegetarian friends out there! They are also a good source fo fibre so they keep you fuller for longer but they also have many other benefits including maintaining regular bowel habits, keep your gut bacteria healthy and happy but also help control blood sugar levels and lower cholesterol levels!


Another benefit is that they are also budget friendly $$

 

SERVES: 4

PREP TIME: 10 mins | COOKING TIME: 30-35 mins

 


Ingredients

  • 1 tablespoon olive oil

  • 1 brown onion, diced

  • 2 garlic cloves, crushed

  • 2 red capsicums, diced

  • 4 eggs

  • 2 x 400g tins diced tomatoes

  • 2 teaspoons cumin, ground coriander and paprika

  • 400g tin cannelloni beans, drained and rinsed

  • 4 slices of multigrain bread, toasted

  • Pepper and chilli to taste (optional)

 

Methods

  1. In a large frying pan heat olive oil over medium heat.

  2. Add diced onions and capsicum. Cook for about 5 minutes or until soft.

  3. Add garlic, cumin, coriander and paprika. Cook for an additional 2 minutes.

  4. Stir in tomato and beans. Allow to simmer for 15-20 minutes to thicken.

  5. Using a wooden spoon create 4 indentations in the mixture and crack an egg into each. Season with pepper and chilli (if desired).

  6. Cover the pan with a lid and cook for another 5 minutes (for runny eggs) or until eggs are cooked the way you prefer.

  7. Toast multigrain bread to your desired liking.

  8. Serve 1 egg per person with a generous scoop of tomato-bean mixture on toast.

  9. Eat and enjoy!

 


Like I always say no meal is the same and no taste buds are the same. What I like may not be what you like, but the beauty about cooking is that you can make any meal your own and make it suit your own tastebuds. Here are some additional changes you could make to the recipe:

  • Serve with polenta or couscous instead of toast

  • Experiment with different combinations of herbs and spices

  • Use a different type of legume. Try kidney, pinto, chickpeas, butter beans or four-bean mix

  • Replace capsicum with eggplant or corn (or add in some of your favourite vegetables)

  • Try using your favourite cheese and mix it through instead of using eggs
