SUMMER IS HERE!! (Well in Australia anyway)

And that means:
Hot weather
Sweat
Beach days
Sweat
Over heating
Sunshine
Tanning
Summer fruit
Did I mention sweat?
I know I'm probably making summer sound horrific, but here is Australia it can get VERY hot during summer and personally, I prefer the cold weather and the snow!
BUT... these tasty frozen fruit sorbet go down a treat!! and they are incredibly easy to make. All you need is fruit, a blender and ice cream moulds and you're good to go!!
MAKES: ~8-10 each flavour
PREP TIME: 2-5 mins | FREEZE TIME: 2-3 hours (or overnight)
Ingredients

Mango & Passionfruit Sorbet (yellow sorbet)
1 packet frozen mango (or fresh mango)
3 passionfruit
Strawberry Sorbet (pink sorbet)
1 packet frozen strawberries (or fresh strawberries)
1 tbsp maple syrup
Methods
Mango & Passionfruit Sorbet
Place frozen mango into food processor or blender and blend until smooth/ice-cream texture (i.e. 1-2 minutes).
Place in passionfruit seeds and blitz for another few seconds to mix the passion fruit through the mango
Pour mango mixture into ice-cream moulds and place in freezer.
Freeze for 4-5 hours (or overnight)
Strawberry Passionfruit Sorbet
Add frozen strawberries and maple syrup into food processor or blender and blend until smooth/ice-cream texture.
Pour strawberry mixture into ice-cream moulds and place in freezer.
Freeze for 4-5 hours (or overnight)
NOTE: I found that it was hard to tell if the passionfruit or strawberry mixture made it to the end of the moulds. So if you find the mixture is too think add a small amount of water.
The best thing about these is you can experiment with so many different flavours and serve it in so many different ways.

Other tasty flavours:
Mixed berries (i.e. strawberries + blueberries + raspberries)
Banana
Choc banana (i.e. Banana + coco powder)
Watermelon
Melon surprise (i.e. watermelon + honey due)
Lemon and lime
Orange
Mango and raspberry
Any mix of your favourite fruits!!
Ways they can be served:
Using different ice block moulds
Using ice cube trays (and placing them in water or soda water to give your drink an extra fruity flavour)
Different shape moulds (extra exciting and create for the kiddies)
freeze in bulk and serve using an ice cream scoop
So get creative, get the kids involved. I guarantee everyone will love these!
I'd love to hear from you... Comment & let me know your favourite fruit combination this summer!!!
Enjoy xx
